My email program is Thunderbird, almost like Outlook Express. Contest entries are coming in, (the usual, name, address, etc.), and I would like to know if its possible to export this info at one time to Excel?

Most email applications enable you to export your info in CSV format.
Of yours have this, then once you did the export, you can easily open that SCV file in Excel
If not, then let me know what is the type that is you can export with. and I can guide you from there
